EXCERPT from “Blinchiki”. . .Straight from the Ukraine by Helene Kobelnyk in VIVAcini! 21 Sep 2012

I used to LOVE to cook and bake until I discovered
I wanted a career first and that I preferred
to be riding my horse instead of playing in the kitchen.

However, lately I’ve discovered a yearning
for some of my favorite dishes that are really
“hand-me-down” recipes from the “Old World”—
German and Ukrainian, and aren’t written down
in any cookbook that I know of. So we’re launching
our recipe section in this issue of VIVAcini
with a very simple breakfast item, a modified
version of cheese blintzes from the Ukraine,
called “Blinchiki.”
