Cabbage Rolls “a la Ukraine”
1 medium sized head of cabbage
1 cup rice ( long grain white or some other rice )
1 lb of ground chuck or lean beef
1 egg
Salt, butter and spices to taste

With a sharp knife, carefully cut a cone-shape
out of the core without detaching any of the outer
leaves. This allows the boiling water and hot steam
to penetrate more easily to the inside of the cabbage
head.
Steam until the leaves become soft and pliable.
In a large pot, add the rice to 2-3 cups of water and
salt—boil until the rice is partially cooked. Empty
rice into a sieve and run under cold water to rinse
any excess starch, keeping the rice fluffy.
